The effect of Additional Manalagi (Malus Sylvestris) Apple Cider Juice on Chewy Candy's Sensoric Quality

This study aims to the effect of adding manalagi apple cider sensory quality chewy candy on aspect color, taste, aroma, and texture. research was conducted in Analysis Engineering Laboratory Culinary Education Study Program Faculty State University Jakarta carried out September 2020. uses an experimental method with different percentages namely 20%, 40%, 60% then a hedonic test is 15 moderately trained panelists. The results descriptive analysis show average value color 4.4 light green categories percentage sweet taste 4.8 sweetness flavor 4.2 feels aroma 3.9 apple-scented category 40%. Based hypothesis using Kruskall-Wallis test, it stated that texture continued Tuckeys best result obtained 4.0 which product addition Manalagi cider.
